- Remove steak from fridge to bring the meat temperature up to close to room temperature (keep covered)
- Lightly rub both sides of the steak with oil and season generously with salt & pepper.
- Preheat pan or BBQ at highest heat.
- Depending on how you like your steak cooked and the thickness of the steak depends on the cooking time. For medium rare 1 inch thick Gilly’s rump steak, cook it for 3 min each side turning only once.
- Remove immediately from heat and allow to rest for 3 minutes in a warm environment. Once rested, then place on serving plate.
Handy Tips:
- Don’t pierce the steak with a fork or knife as this will let the juices escape
- Larger, thicker cuts may be sealed quickly on a plate then finished in an oven. For examples Gilly’s OP (Oven Prepared) Rib. Perfect winter meal for 2!
Remember, it’s all about feel!
Rare: Hold one hand up loosely and with the other hand press the ball of your thumb (this is the fleshy part of your hand directly under your thumb). This should give you the feeling of a rare steak.
Medium: Bring your index finger to your thumb and make a circle. Using your other hand, press the ball of your thumb to get the feeling of a steak that’s medium done.
Well done: Bring your middle finger to your thumb to make a circle, using your other hand press the ball of your thumb to get the feeling of a well done steak.
